Banana Loaf Cake

Grease and flour an oblong cake pan, 13x9x2 inches.

Sift together:

• 2 c. flour
• 1-1/2 t. baking powder
• 1 t. baking soda
• 1 t. salt
• 1 1/3 c. sugar

Then add:

• 1/2 c. shortening
• 1 c. mashed banana, about 2 or 3
• 1/4 c. milk
• 1 t. vanilla

Beat 2 minutes by electric mixer on medium speed. Scrape sides and bottom of bowl frequently. Then add 2 eggs. Beat 2 minutes more, scraping bowl frequently. Stir in 1/2 c. finely chopped nuts. Pour batter into prepared pan and bake in preheated oven 35 minutes.
